Is there a way for when my members click on a category, the stories will be listed default by what was written most recently? Right now, it looks like they might be in alphabetical order - as the default search.

You can change the default story sort in Admin > Settings > Display Settings.

The setting in your personal profile will override this however. So check that when testing. This is a case where testing as a guest would be best.
